Ingredients

  • 15 phyllo shells
  • 4 oz brie cheese
  • ¼ cup dried cranberries
  • ¼ cup walnut pieces

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • Cut your brie into 15 small cubes. You don’t need to remove the rind - it’s totally edible and melts well.
  • Place the phyllo shells on the baking sheet. Add one piece of brie to each shell.
  • Top each piece of brie with a few dried cranberries and a small pinch of chopped walnuts.
  • Bake in the preheated oven for 10 minutes, or until the brie is melted and the phyllo is golden and crisp.
  • Serve warm right from the oven, or let them cool for 5 minutes before transferring to a serving platter.

Notes

Cut the Brie While Cold: Brie is easier to slice when it's just out of the fridge. Let it warm up after it's cut.
Don’t Overfill: A few cranberries and a pinch of walnuts per shell is enough - overloading can cause the filling to spill during baking.
Keep an Eye on the Oven: Phyllo can burn quickly, so start checking after 8 minutes.
Make Ahead-Friendly: You can assemble the bites a few hours ahead and refrigerate. Just bake them right before serving.
