Ghost Rice Krispie Treats

These Ghost Rice Krispie Treats are a fun and spooky way to sweeten up Halloween. They’re crunchy, chewy, and topped with a smooth layer of chocolate for just the right mix of textures. Plus, they’re easy enough for kids to help decorate, making them a festive kitchen project.

Ingredients
  

  • 10 ounces mini marshmallows
  • ¼ cup unsalted butter sliced
  • 6 cups crispy rice cereal
  • 12 ounces white melting chocolate
  • ½ cup chocolate chips

Instructions
 

  • In a large microwave-safe bowl, combine the marshmallows and butter. Heat in 30-second intervals, stirring after each one, until the marshmallows are melted and the butter is fully mixed in.
  • Pour the crispy rice cereal into the bowl and stir gently until every piece is coated in the marshmallow mixture. Let the mixture cool for about 10 minutes so it’s easier to handle.
  • Lightly grease your hands with cooking spray. Scoop out a small handful of the mixture and press it together until it holds.
  • Shape the mixture into an oval with a flat bottom, like a little ghost. Place each one on parchment paper to set. Continue until you’ve used all the mixture.
  • Melt the white chocolate according to the package directions. Dip the tops of the ghost shapes into the chocolate, then place them back on the parchment paper. Let them harden for about 30 minutes.
  • Melt the chocolate chips and transfer them into a piping bag or a small plastic bag with the corner snipped off. Pipe two eyes and a mouth onto each ghost. Let the chocolate firm up before serving. Enjoy!

Notes

Be Sure To Grease Your Hands: Coating your hands with cooking spray makes shaping the sticky mixture much easier.
Cool Before Shaping: Allow the mixture to rest for 10 minutes so it isn’t too hot to handle.
Vary the Sizes: Make some ghosts larger and some smaller for a fun mix on the serving tray.
Use Parchment Paper: This prevents sticking and makes cleanup so much faster.
