Maple Mustard Glazed Cod

Ingredients
  

  • 4 cod fillets about 6 oz each
  • 2 tablespoons Dijon mustard
  • 2 teaspoons whole grain mustard
  • 3 tablespoons maple syrup
  • 3 tablespoons olive oil
  • 1 teaspoon granulated garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Preheat the oven to 350°F (177°C). In a medium bowl, combine the Dijon mustard, whole grain mustard, olive oil, maple syrup, salt, granulated garlic, and pepper. Whisk until smooth and fully mixed.
  • Line a baking dish with parchment paper or foil. Pat the cod fillets dry with paper towels to help the glaze stick.
  • Place the fillets in the dish and spoon the glaze evenly over each piece, coating all sides.
  • Bake the cod in the preheated oven for 20 minutes. If your fillets are thick (over 1 inch), flip them after 15 minutes and bake for an additional 10–15 minutes, until the fish flakes easily with a fork.
  • Remove the dish from the oven and let the cod rest for a minute or two. Spoon any extra glaze from the baking dish over the fillets. Serve immediately with your favorite sides.

Notes

Dry the Fillets First: Blotting the cod with paper towels helps the glaze adhere and keeps the fish from steaming.
Line Your Dish: Parchment or foil makes cleanup a breeze and helps prevent sticking.
Watch for Thickness: Thicker fillets may need up to 30 minutes of total baking time.
Use a Pastry Brush: If you have one, it helps evenly distribute the glaze across the fish.
