Ingredients

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • corn or flour tortillas about 3 or 4

Toppings

  • diced avocado
  • lime wedges
  • diced red onion
  • mixed greens
  • shredded red cabbage
  • 1/3 cup ranch dressing

Instructions

  • Preheat a skillet over medium-high heat. Add the olive oil and let it warm up for a minute. Add the shrimp and cook for 2–3 minutes on each side until pink and opaque.
  • Sprinkle in the red pepper flakes and garlic powder as the shrimp cook. Season with salt and pepper to taste. Remove the skillet from heat.
  • In a clean skillet or on a hot grill, warm each tortilla for about 30 seconds on each side. This makes them soft, pliable, and slightly charred for extra flavor.
  • Lay a tortilla flat and add a few shrimp. Top with avocado, red onion, lettuce, and shredded cabbage. Squeeze fresh lime juice over the top and drizzle with ranch dressing.
  • Serve the tacos immediately while warm and juicy. They’re best fresh off the skillet.

Notes

    • Avoid Overcooking the Shrimp: They’re done in 2–3 minutes per side - look for pink, opaque, and curled.
    • Prep Toppings First: Have everything chopped and ready before cooking so you can assemble quickly.
    • Use a Large Skillet: Avoid crowding to let the shrimp sear instead of steam.
    • Taste and Adjust: Add more red pepper flakes or salt near the end if needed.
    • Customize Freely: Swap in spicy mayo, add jalapeños, or skip the ranch if you prefer something different.
    • Serve Right Away: Shrimp are best hot, especially paired with cool, fresh toppings.
